Oolong tea is semi oxidised and is mainly produced in China and Taiwan.  The production process for Oolong tea can be rigorous with the leaves being shaken or "rattled" to bruise the leaves.  The process can go on for hours and requires great skill in achieving the correct level of oxidation.  The leaves then go through a process of firing and rolling and are either rolled or twisted to finish.
