White Tea

Produced mostly in China, white tea is the least processed of the teas, and as a result is the lightest and most delicate.  During processing the leaves are allowed to wither naturally for 2-3 days to allow a very slight natural oxidation.  There are only a handful of styles of white tea with Bai Hao Yin Zhen (Silver Needles) being the most highly prized.
